  1. Clean and peel the mushrooms. 
  2. Remove the leg and scoop out the inside of the mushroom. Do not throw it, it is suitabe for sauces or soups, so chop it, put in plastic bag and keep it in the freezer. 
  3. In a bowl chop the blue cheese into small pieces, add the pepper and dried vegetables.
  4. Mix well and fill mushrooms with this mixture. It is necessary to press them slightly, but be careful no to break it. 
  5. Lay them on a baking tray lined with baking paper. 
  6. The top of mushrooms decorate with grated cheese and garnish with parsley. 
  7. Bake at 180°C for about 10-15 minutes.
